Mint Brownies

These are so wonderful.
I have found different versions of this recipe all over the internet.


2 c. butter – melted
3/4 c. cocoa
2 1/4 c. sugar
6 eggs – beaten

Combine above ingredients and mix well. Add the following to the mixture:

2 c. flour
1/8 tsp. salt
2 tsp. vanilla

Bake this brownie layer in a Texas sheet cake pan or two 9″ x 13″ pans for this amount. Bake at 350 for 15 minutes (add 8-10 minutes if you use two 9″ x 13″ pans. Cool completely.

Mint frosting

4 c. powdered sugar
1/2 c. butter – melted
5 Tbsp. milk
6 drops food coloring
2 tsp. mint or peppermint extract

Spread frosting on chilled cake and then chill again. Melt a bag of semi-sweet chocolate chips and spread for top layer. Chill.

My Home Scrapbook

My Home Scrapbook is an 8 x8 scrapbook that documents each of the places we have lived since I have been married. In the past 8 years, I have lived in 6 different homes. I love this scrapbook and know that it will be even more fun to look at as the years pass.

Each 2 page layout includes:

A photo of the home
Dates we lived there
Phone numbers
Cost of home/the amount we paid for rent
Square Footage
Number or bedrooms and bathrooms
What we loved and loathed
Why we lived there
Favorite places
Ward and callings
Memorable moments

Here is an example of what each two page layout looks like. They are all different, but have the same color scheme.

Chocolate Covered Strawberries

Need a quick and easy Valentines treat?
Look no further! These sweet treats are the best.

Chocolate Covered Strawberries

16 ounces milk chocolate chips
2 tablespoons shortening
1 pound fresh strawberries with leaves


1. Insert toothpicks into the tops of the strawberries.

2. In a double boiler, melt the chocolate and shortening, stirring occasionally until smooth. Holding them by the toothpicks, dip the strawberries into the chocolate mixture.

3. Turn the strawberries upside down and insert the toothpick into styrofoam for the chocolate to cool.

I love the recipe I found at I melt mine in the microwave instead of the double boiler and the turned our great. I did not have any styrofoam so I just put the dipped strawberries on wax paper and in the refrigerator to cool.

Valentines Decor

I have been very impressed with blogland's Valentine decor ideas! There are so many cute ones! Here are some that I copied and love!
Eighteen 25 Subway Art! I printed mine as an 8X10 and bought a $3.00 frame from Walmart. Total cost was $4.00 and I think it's so cute! I also made about four of Idea Room's felt balls. I also put two red ones on candlesticks.
Last year I made Tatertots and Jello XOXO Valentine Craft.
I think Valentine's day has some of the cutest holiday decor!
