This yummy recipe is from Betty Crocker. It was the perfect side dish on the grill.

| 4 cups frozen potatoes with onion and peppers 1 Tbsp. vegetable oil 1/2 tsp. seasoned salt 3/4 cup shredding cheddar cheese 1. Heat gas or charcoal grill. Spray 1 (18x13-inch) sheet of heavy-duty foil with cooking spray. Place potatoes on center of foil. Drizzle with oil; sprinkle with seasoned salt. 2. Bring up 2 sides of foil over potatoes so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal. 3. Place packet on grill over medium heat. Cover grill; cook 30 minutes, turning once. Carefully open packet; sprinkle cheese over potatoes. Cover loosely; let stand 4 to 5 minutes or until cheese is melted. {Alish} |

I do something a little simiular to this... I just take a potato, slice it up, then lay it on foil, take an onion, slice it up, then add a spoonful of butter and seasoning, then stick it on the grill for 15 minutes. It's so quick and easy and I love how no mess is made! I will have to try this one because I love cheese! :)
